Is environmental noise such as that for SINR factored into the system in some way and if so how? Or is it a factor that would need to be incorporated into the model post-processing?

The channels generated by the DeepMIMO do not include channel noise. Therefore, you may add it in the post-processing and compute SNR/SINR based on your model.
Note: The channels are generated assuming a 0dBW transmit power (per antenna element). You may scale that in the way you are interested in.
